I canceled the second email in a hunt but my account shows that this particular email is scheduled to be sent out for many of my customers? Can I replace the letter in the hunt with a new one and know it will be sent to the customers already scheduled?

Once a Hunt gets deleted, all the corresponding Pending emails associated to that Hunt will also get deleted. You will only be able to replace the emails by creating Hunt with the new template and set it to target past date range, and a new set of Hunt set for future orders.
