I have an hunt email to the customer thanking them for their order, which is scheduled for ASAP at 12:00pm (8pm GMT). But the emails are not being sent until the following day, which is after the delivery of the item!

I'm sorry to hear about that, it looks this could be due to slight delay on Amazon, oftentimes when an order goes into "Complete" stage within Amazon, and they send us the order data, there is a delay and sometimes hours later before we get it, thus emails will get created and scheduled a little later than expected.
Sorry I do not accept this. Especially since we are on the GMT time zone... our day is finished as yours is starting and times for despatch reflect this already. Please can you investigate this rather than providing a vanilla response, as receiving the email after delivery makes the Hunt option redundant!? Thank you.
I consulted this with our Devs and have confirmed that "ASAP" in the app have always been set to send email the next day with the selected time, we will have our Dev teams investigate further to see if they can improve this logic despite some delays on Amazon's API.
